SINGAPORE — Bali institution Potato Head is set to take over Keong Saik Road’s landmark Tong Ah Building next month — sans coconut trees or gorgeous pool.

To be called Potato Head Folk, the new burger joint marks the beach club’s first outlet overseas and project opening manager and celebrated bartender Dre Masso said it will comprise the “whole package”.

The four-storey project, which will include a restaurant, a lounge called Studio 1939 and a rooftop garden with a tiki bar, was done in collaboration with Australian artist David Bromley.

“David is very much inspired by childhood works so there is a sense of nostalgia and playfulness in Potato Head Folk,” said Masso.

Potato Head Folk will feature a menu similar to Potato Head’s Three Buns restaurant, which recently opened in Jakarta. For the Singapore outlet, a special caviar and veal patty burger version of Surf and Turf will be created.

That dish may not sound very folksy but, for Masso, “folk, to us, means friends, family and community; the word is also associated with craft culture—how everything is made by hand and with integrity”. SERENE LIM
