HAIRY CRAB SENSATION AT SZECHUAN COURT
While hairy crabs can be served in a number of ways, Szechuan Court & Kitchen at Fairmont Singapore says the best way to enjoy these crustaceans is to simply steam them, although here it’s steamed with shiso leaf. Other highlights include baked hairy crab with aged Chinese wine and braised “bai ye” tofu with crab meat and edamame. These can be ordered a la carte or as part of their Set A (S$98 min. 2 persons) or Set B (S$118 min. 2 persons) menus. Until Nov 4. Call 1800 441 1414 for reservations.
PEONY JADE @ KEPPEL CLUB HAIRY CRAB MENU
Peony Jade restaurant proudly presents a range of Cantonese creations — a mix of traditional and innovative dishes. For traditionalists, there’s the sea salt-baked hairy crab in golden pillow (S$68), using the yang-element sea salt to neutralise the crab’s cooling yin effect. An inspired dish is the wok fried egg white with hairy crab meat (S$32).

EXQUISITE HAIRY CRAB DELIGHTS AT YAN TING
Yan Ting’s Executive Chinese Chef Mak Kip Fu will be serving a selection of two eight-course set menus, Hairy Crab Exclusive Set Menu (S$148) and Hairy Crab Luxury Set Menu (S$188), featuring steamed whole hairy crab (purchased individually at S$60 per 200g and S$98 per 250g), pan-seared scallop with shrimp mousse, pan-roasted rack of lamb with chef’s signature coffee glaze and more.
